After many years living with someone, you get to the point where you don’t know what to give as a gift. The creative options are gone and the traditional ones you’ve already used. What now? I think it’s even more common to suffer from this with our mothers, of course, they are with us since the beginning, when you cried for the first time. Thinking about a gift on this date may be hard, if you don’t have any clue to what she wants or needs. In this case, the best option is always go for the belly: a cupcake won’t be wrong.
But Juliana, are you saying I should bake 12 cupcakes to give as a gift to mom? She is gonna kill me for making her fat, or they’ll just lay around rotting because she won’t eat everything. You should bake only two cupcakes: one for you and another for your mom. Or two for her. It’s her day and she can eat as much as she wants!
Vanilla cupcakes for two
Recipe from How Sweet It Is.
Yields: 2 cupcakes
1 egg white
2 tablespoons sugar
2 tablespoons butter, melted
1 teaspoon vanilla (yes, a full teaspoon – they are super vanilla-y!)
1/4 cup flour
1/4 heaping teaspoon of baking powder
pinch of salt
1 1/2 tablespoons milk
1 – Turn your oven to 180˚C. In a medium bowl with a fork, beat the egg white with sugar.
2 – Add the vanilla and the melted butter. Mix.
3 – Sift the flour, baking powder and salt on top of the wet mixture and beat until incorporated.
4 – Add the milk, making sure not to beat too much.
5 – Divide the batter into two baking cups, filling 2/3 of each. Use the middle baking cups of your cupcake pan.
6 – Bake for 18 minutes, or until a toothpick inserted in the center of each comes out clean.
It took me two times to get this recipe right. The tip is to be very careful when beating the egg white with the sugar, otherwise the cupcake will lose its dome. Fill it with something yummy, that your mother will love, and cover with a frosting that’s not too sweet.

– I left the cupcakes in the oven for a longer period than indicated in the original recipe. You should always leave them for a minimum of 16 minutes and then start checking with the toothpick minute by minute.
